Chocolate Mudslide Cake

About the Recipe

My kids love frozen mudslides, made with chocolate ice cream. This is my winter homage to that. It can also be made as six mini-bundts and one small bundt. I often do that so I can gift the minis.

Ingredients

For Cake

  • 1 box chocolate cake mix

  • 1 box fudge brownie mix

  • 4 eggs, beaten

  • 3/4 cup water

  • 1/2 cup coffee flavored liqueur

  • 1 cup oil


For Ganache

  • 2/3 cup heavy whipping cream

  • 1 bag semi-sweet chocolate chips

  • 1/3 cup Irish Cream liqueur


For Frosting (optional)

  • 1 cup unsalted butter, softened

  • 1 cup cream cheese, softened

  • 4 cups powdered sugar

  • pinch salt

  • 1/4 cup Irish Cream Liqueur

Preparation

For Cake

Step 1


Heat oven to 350°. Prepare bundt pan as desired (baker's spray or melted butter and flour or cake mix).



Step 2


Combine all cake ingredients in a large bowl and stir until mostly smooth, approximately 2 minutes.



Step 3


Pour batter into prepared bundt pan and bake for 50 - 55 minutes, until toothpick inserted comes out mostly clean.



Step 4


Remove cake from oven and let cool for 5 - 10 minutes. Carefully turn cake out on to cake plate.



For Ganache

Step 1


Pour heavy whipping cream in large, microwave-safe bowl. Heat for 1-1/2 minutes until just starting to boil.


Step 2


Carefully pour chocolate chips in to cream. It may rise and bubble.


Step 3


Let sit for 5 minutes. Add Irish Cream and whisk until shiny and smooth, about 1 minute.


Step 4


Pour over cooled cake.



For Frosting

Step 1


Mix all ingredients on high speed until smooth and fluffy. Pipe on to cake.
